White Queso

Ultra-smooth, restaurant-style white queso made from scratch with a buttery roux, white American cheese, Monterey Jack, and green chiles. Creamy, melty, slightly spicy (if you want it), and ready in about 15 minutes. Perfect for dipping, drizzling, or straight-up hovering over with chips.

Ingredients
  

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups whole milk don’t play yourself with skim — we want creamy
  • 2 cups white American cheese shredded or chopped
  • ½ cup Monterey Jack cheese shredded
  • 1 small can diced green chiles drained
  • 1 small jalapeño finely minced (optional but highly encouraged)
  • 1 teaspoon garlic powder
  • Salt to taste
  • A tiny pinch of cumin

Instructions
 

Start with the buttery base

  • Grab a medium saucepan and melt the butter over medium heat. Once it’s melted and happy, sprinkle in the flour. Stir it around for about a minute. We’re making a little roux — nothing scary, just the magic that keeps the queso thick and smooth instead of watery and weird.
  • It should look like a pale paste and smell slightly toasty. If it turns brown, we went too far. Keep it light.

Pour and whisk like you mean it

  • Slowly pour in the milk while whisking. Not dumping. Pouring. Whisking. Channel your inner cooking show queen.
  • Let it simmer gently for a few minutes until it thickens slightly. You’re looking for “coats the back of a spoon” energy. Not pudding. Not soup. Somewhere in between.

Cheese time, baby

  • Lower the heat. This is important. Cheese does not like drama. High heat will make it separate and turn grainy, and we do not do grainy queso in this house.
  • Add the white American cheese a handful at a time, stirring until melted before adding more. Then add the Monterey Jack. Keep stirring gently until everything is smooth and glossy and making you question your self-control.
  • At this point I usually grab a chip “just to test it.” That test becomes five tests. It’s fine.

Flavor it up

  • Stir in the green chiles, jalapeño (if using), garlic powder, cumin, and a pinch of salt. Taste it. Adjust it. Add more jalapeño if you’re feeling bold. Squeeze a tiny bit of lime if you want brightness.
  • And just stand there for a second and appreciate what you created.

Serve it hot and watch it vanish

  • Pour it into a bowl and top with cilantro or extra jalapeños if you’re feeling cute. Serve immediately with tortilla chips, warm tortillas, drizzle it over tacos, or honestly just stand at the stove with a spoon. I won’t tell.

Notes

Keep the heat low when adding cheese. High heat = grainy queso. We want silky, glossy, dreamy vibes.
Shred or chop cheese fresh if possible. Pre-shredded works, but fresh melts smoother and gives that restaurant texture.
If it thickens too much, stir in a splash of warm milk and gently reheat. Queso always comes back with a little love.
Spice control is your call. Skip jalapeño for mild, add pepper jack or extra chiles if you’re feeling bold.
For parties: Keep warm in a small slow cooker on “warm” and stir occasionally to keep it smooth.
Add-ins glow-up: Cooked chorizo, seasoned ground beef, or even a spoonful of salsa can take it next level.
