Ingredients
  

For the Crust:

  • 1 1/2 cups graham cracker crumbs or digestive biscuits, finely crushed
  • 1/4 cup sugar
  • 1/2 cup unsalted butter melted

For the Cheesecake Filling:

  • 16 oz cream cheese softened
  • 2/3 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract

For the Strawberry Swirl:

  • 1 cup fresh strawberries pureed
  • 1 –2 tbsp sugar depending on sweetness of berries
  • 1 tsp lemon juice

Optional Decorations

  • Fresh strawberry slices on top
  • Whipped cream dollops for serving
  • A light dusting of powdered sugar

Instructions
 

Prep the Crust

  • Preheat your oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter until it’s like wet sand. Press firmly into an 8x8-inch baking pan. Pop it in the oven for 8–10 minutes. Let it cool while you prep the filling — I like to taste-test the crumbs here. Totally optional, but highly recommended.

Make the Cheesecake Filling

  • Beat softened cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla. The batter should be silky, dreamy, and slightly addictive on its own. Resist the urge to eat it straight from the bowl… maybe.

Prepare the Strawberry Swirl

  • Puree the strawberries with sugar and lemon juice until smooth. You want a sweet-tart vibe that’ll complement the creamy filling perfectly.

Assemble the Bars

  • Pour the cheesecake filling over the cooled crust. Spoon the strawberry puree in dollops on top. Take a knife and swirl it gently, creating pretty patterns. Don’t overthink — uneven swirls = character, remember?

Bake & Chill

  • Bake for 30–35 minutes until the edges are set but the center still jiggles slightly. Let cool to room temperature, then refrigerate for at least 2 hours. The chill time makes them perfect for slicing into clean bars without falling apart.

  • Use room temperature cream cheese for smooth, lump-free filling.
  • Chill the bars for at least 2 hours before slicing to maintain structure.
  • Puree strawberries for a silky swirl; chunky bits may tear the bars.
  • Optional toppings: fresh strawberry slices, whipped cream, or nuts for extra texture.
  • Bars can be stored in the fridge for up to 4 days; freeze for longer storage.
