Ingredients

For the steak & onions:

  • 1 lb flank steak or ribeye thinly sliced — you want it tender!
  • 2 tablespoons olive oil
  • Salt & black pepper season like you mean it
  • 1 large onion thinly sliced
  • 1 teaspoon sugar or honey for caramelizing magic
  • Optional: 1 teaspoon garlic powder or a couple cloves minced

For the sandwiches:

  • 4 –6 soft sandwich rolls or hoagie buns
  • 4 –6 slices provolone or mozzarella cheese your call on melty vibes
  • Optional toppings: arugula pickled peppers, or even a drizzle of mayo or horseradish sauce

Instructions

Prep your steak, babe

  • Start by slicing your steak thin — like super thin, almost paper-thin. This is the key to tender bites that melt in your mouth. I usually throw mine in the freezer for 20 minutes before slicing; makes it soooo much easier. Then season both sides generously with salt, pepper, and a pinch of garlic powder if you’re feeling fancy.

Caramelize those onions

  • Grab a skillet, add a tablespoon of olive oil, and toss in your thinly sliced onions with a pinch of salt and sugar. Let them cook low and slow over medium heat, stirring occasionally. Babe, this is patience central — don’t rush it. You’re aiming for golden, soft, sweet onions that smell like pure kitchen therapy. I promise, this step alone is worth every second.

Sear the steak

  • In the same skillet (more flavor, less washing — win-win), add another tablespoon of olive oil and crank the heat to medium-high. Toss in your steak slices in a single layer — don’t crowd the pan! Let them sear for 2–3 minutes per side until they’re gorgeous and brown, but still juicy. Remember: thin slices cook fast, so keep an eye on them. Overcooked steak = sad sandwich vibes.

Toast those rolls

  • While the steak is doing its thing, slice your rolls and lightly toast them. I do mine in a skillet with a little butter, just until they get golden edges. That little crunch + buttery flavor? Game-changer.

Build your masterpiece

  • Alright, this is the fun part. Layer the melty cheese first (I like it right on the steak so it melts while it rests), then pile on your steak slices, top with those sweet caramelized onions, and sprinkle any extras — arugula, pickled peppers, or your fave sauce. Then, sandwich it all together like the queen you are.

Optional melt moment

  • If you want to take it next-level, wrap the whole sandwich in foil and pop it in a 350°F oven for 5 minutes. The cheese gets ooey-gooey, and everything mingles beautifully. I swear, it’s like magic in your mouth.

Notes

  • Steak Choice: Flank or ribeye works best for tender, thin slices.
  • Cheese Tips: Provolone or mozzarella melts perfectly — go generous!
  • Onion Magic: Don’t skip the sugar when caramelizing onions — it takes the flavor next-level.
  • Make Ahead: Slice steak & onions in advance; assemble & toast before serving.
  • Toppings Are Flexible: Arugula, pickled peppers, mayo, or horseradish — your sandwich, your vibe.
  • Optional Oven Melt: Wrap assembled sandwiches in foil and bake 5 minutes at 350°F for extra gooey perfection.
