Ingredients
  

  • 2 tablespoons olive oil – she’s the silky starter to our flavor story
  • 1 small onion diced – adds the depth (and she always makes me cry... rude)
  • 3 garlic cloves minced – non-negotiable. Always.
  • 1 teaspoon dried thyme – because this soup deserves a little herb love
  • 1/2 teaspoon red pepper flakes – optional but gives it that flirty kick
  • 3 cups shredded rotisserie chicken – leftover magic baby
  • 4 cups chicken broth – the heart of it all
  • 1 cup heavy cream – makes it “marry me” level creamy
  • 1/2 cup grated parmesan – salty nutty, dreamy
  • Salt and pepper to taste – trust your gut here
  • Optional: a handful of baby spinach or kale – for the “I tried to be healthy” vibe

Instructions
 

Sauté Like You Mean It

  • Heat up that olive oil in a big ol’ pot. Toss in your onion and sauté until she’s soft and sweet — about 5 minutes. Add your garlic and thyme and let them get cozy in there. If it smells like your kitchen just turned into a candle shop, you’re doing it right.

Chicken In, Drama Out

  • Stir in the shredded chicken and pour in the broth. Crank up the heat a little and bring her to a soft boil — not aggressive, just bubbly and happy. Stir occasionally and hum something cute while you wait (I sang Beyoncé, obviously).

Creamy Confessions

  • Lower the heat and pour in the cream. Add the parmesan. Stir it gently like it’s your new crush. Let everything melt and meld for 5–7 minutes. If the soup starts to thicken, don’t panic — she’s just leveling up.

Taste, Love, Adjust

  • Season with salt and pepper. Taste it. Maybe cry a little. If you want to be fancy (or feel better about your life choices), stir in a handful of greens right at the end.

Notes

  • Don’t skip the parm! It’s what gives that slow-cooked depth.
  • Rotisserie chicken is queen, but homemade shredded chicken works beautifully too.
  • Add greens at the end if you're feeling health goddess vibes.
  • For leftovers: this makes a divine creamy pasta sauce. Just reheat and toss with penne or fusilli.
