For the Chicken:
- 2 large chicken breasts or thighs if you’re feeling juicy
- 1 cup buttermilk or regular milk + a squeeze of lemon
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & black pepper obvs
For the Crispy Coating:
- 1 cup all-purpose flour
- ½ cup cornstarch secret trick for crunch!
- 1 tsp smoked paprika
- ½ tsp cayenne optional if you like a lil’ kick
- Salt & pepper

- Pickles lettuce, tomato slices
- Cheese slices optional but highly recommended — cheddar or pepper jack slays

Marinate like a boss
First things first, babe — get that chicken nice and cozy in its buttermilk bath. Toss in the paprika, garlic powder, onion powder, salt, and pepper. Cover and pop it in the fridge for at least 30 minutes. If you have time, let it chill for a few hours — the chicken gets tender, juicy, and basically sings when cooked.
Get your crunch on
While your chicken is marinating, mix up your crispy coating. In a shallow bowl, combine flour, cornstarch, smoked paprika, cayenne, salt, and pepper. This mix is gonna give your chicken that golden-crunch perfection.
Bread that chicken
Take your marinated chicken and shake off any excess buttermilk (don’t be shy, babe, leave a little clinging on). Then dredge each piece in the flour mixture, pressing lightly so it sticks. Repeat for all pieces — basically, you’re giving your chicken a crunchy little armor.
Fry, baby, fry
Heat a generous layer of oil in a skillet over medium heat. Once it’s shimmering, gently lay in your chicken. Cook about 4–5 minutes per side (depending on thickness) until golden brown and crispy, and the internal temp hits 165°F (75°C). Pro tip: don’t overcrowd the pan — we want crisp, not soggy.
Toast those buns
While the chicken is finishing, toast your buns in the same pan (little butter, little love). This step is game-changing — it keeps your sandwich from getting soggy and adds a warm, buttery touch.
Stack it like a queen
Time to assemble, babe: bun, sauce, lettuce, tomato, that crispy golden chicken, pickles, cheese if you’re using it, and top with the other bun. Give it a little press — just enough to make it snug without squishing your masterpiece.
