For the salad:
- 3 cups cooked chicken chopped or shredded
- Rotisserie chicken = lifesaver. Leftover baked or boiled chicken works too.
- ½ cup celery finely chopped (for that fresh crunch)
- ¼ cup red onion very finely chopped (trust me, small pieces only)
- ½ cup grapes halved (red or green — your call)
- ¼ cup sliced almonds or chopped pecans optional but soooo good
- 2 tablespoons fresh parsley or dill chopped
For the dressing:
- ½ cup mayonnaise full-fat, because we’re living
- 1 –2 tablespoons Greek yogurt or sour cream optional, but I love it
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice fresh is best, babe
- Salt and black pepper to taste
- A pinch of garlic powder
- A tiny pinch of paprika or cayenne optional but cute
Start with the chicken, babe
If your chicken isn’t cooked yet, go ahead and cook it simply — salt, pepper, done. Let it cool, then chop or shred it into bite-sized pieces.
