Ingredients

  • 3 cups cooked chicken shredded or diced (rotisserie chicken works perfectly!)
  • 2 cups cooked pasta elbow, penne, or whatever you’ve got on hand
  • 2 cups broccoli florets or swap with green beans if you’re feeling rebellious
  • 1 small onion finely chopped
  • 2 cloves garlic minced (never skip the garlic — it’s the soul of this dish!)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups milk whole milk = extra creamy, but I won’t judge if you use 2%
  • 1 cup shredded cheese cheddar, mozzarella, or a melty mix — go wild
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika because presentation matters, babe
  • Optional: ½ cup crispy fried onions for topping yes, the crunchy ones from the bag — don’t even pretend you don’t love them

Instructions

Preheat and prep, queen

  • Set your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray. While that’s warming up, let’s get our ingredients ready — chop the veggies, shred the chicken, and pre-cook the pasta.

Sauté like a pro

  • In a medium skillet, melt the butter over medium heat. Toss in your onions and garlic, and let them sizzle until they’re soft and fragrant — your kitchen is gonna smell amazing. Stir occasionally, and don’t rush it. Good things take time, babe.

Make the creamy dreamy sauce

  • Sprinkle the flour over your onion-garlic mix, stirring constantly for about a minute. Now, slowly pour in the milk while whisking like you’re in a cooking montage. Keep stirring until it thickens slightly — silky, smooth, and oh-so-delicious. Add salt, pepper, paprika, and half your cheese. Keep stirring till the cheese melts into that creamy hug of a sauce.
  • Pro snack moment: I may or may not have licked the whisk… it happens, no shame.

Mix it all together

  • In a big mixing bowl, toss together the cooked pasta, shredded chicken, broccoli, and creamy sauce. Make sure everything’s coated in that cheesy goodness — we’re talking full-on comfort overload.

Layer it like a boss

  • Pour half of the mixture into your greased baking dish, then sprinkle a little extra cheese over it (because why not?). Add the remaining mixture on top and smooth it out. Finish with the rest of the cheese and, if you’re feeling extra, a handful of crispy fried onions. Pop on some paprika for that little glam touch.

Bake till golden perfection

  • Cover with foil and bake for 25 minutes. Then remove the foil and bake another 15–20 minutes, until the top is golden and bubbly. Peek at the edges — if you see sauce bubbling and cheese all melty, babe… you’re in business.

Let it chill (just a sec!)

  • I know, I know — your patience is already at zero. But give it about 10 minutes to rest before digging in. It’ll set nicely, slice like a dream, and your tastebuds will thank you for not burning the roof of your mouth.

Notes

• Rotisserie chicken saves time and adds extra flavor — highly recommend.
• You can substitute pasta with cooked rice if you prefer a more classic casserole texture.
• For extra richness, swap ½ cup of the milk for heavy cream.
• Add crispy fried onions or buttered breadcrumbs on top for crunch.
• If making ahead, assemble fully but wait to add crunchy toppings until just before baking.
• Store leftovers in an airtight container in the fridge for up to 4 days.
• Reheats beautifully in the oven at 350°F or in the microwave.
