- 2 cups cooked chicken shredded or cubed — rotisserie chicken is my lazy queen shortcut
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1 cup milk whole milk = extra cozy vibes
- 1 can cream of chicken soup the creamy backbone, okay
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 cup shredded cheese cheddar is my go-to, but mix it up if you’re feeling spicy
- 1 tablespoon butter
- Salt & black pepper season like you love yourself
- 1 teaspoon paprika
- Optional: frozen peas or carrots for a lil’ color moment
Start with the good smells
Okay first — preheat your oven to 375°F (190°C).
Grab a pan, melt that butter, and toss in your onion. Let it cook till soft and a little golden. Then add garlic and stir for like 30 seconds till your kitchen smells like you actually know what you’re doing.
Build that creamy base
In a big bowl, mix together the cream of chicken soup, milk, and chicken broth.
Give it a good stir till smooth — no lumps, we’re not doing drama today.
Then add your uncooked rice, cooked chicken, sautéed onion & garlic, plus your salt, pepper, and paprika.
Mix it all up like you mean it.
Add your extras (aka personality)
If you’re using peas, carrots, mushrooms, whatever — throw them in now.
This is your moment. Your casserole, your rules.
Into the dish we go
Lightly grease your baking dish (don’t skip this unless you enjoy scrubbing later).
Pour everything in and spread it out evenly. It might look a little soupy — that’s NORMAL. The rice is gonna soak all that goodness while baking.
Top it with shredded cheese because… obviously.
Bake it till cozy perfection
Cover with foil and bake for about 40 minutes.
Then uncover and bake another 15–20 minutes until the top is golden, bubbly, and lowkey flirting with you.
If you like a slightly crispy top (like me), let it go a few extra minutes. Just keep an eye on it — we want golden, not burnt drama.
Let it sit (I know… but trust me)

But give it like 10 minutes to rest.

And also… you won’t burn your mouth. Learn from my mistakes.
- Don’t panic if it looks a little “soupy” before baking — the rice absorbs everything while it cooks. Magic happens in the oven, babe.
- Rotisserie chicken = shortcut queen energy. Zero shame, maximum flavor.
- If you want it extra creamy, add a little more milk or a spoon of sour cream.
- Let it rest at least 10 minutes after baking or it’ll fall apart (and burn your tongue… learned that the hard way).
- Cheese on top is not optional in this house. It’s the golden crown of the casserole.
