Ingredients
  

  • 2 slices of good bread sourdough, brioche, English muffin — pick your vibe
  • 2 large eggs
  • 1 breakfast sausage patty
  • 1 –2 slices cheese cheddar, American, pepper jack, Swiss — live your truth
  • 1 tablespoon butter
  • Salt + black pepper
  • Optional but iconic: avocado slices tomato, spinach, hot sauce, mayo

Let’s get crispy, babe

  • Start with your bacon or sausage in a skillet over medium heat. Let it cook until crispy and golden and smelling like motivation.
  • If you’re doing bacon, flip it when it starts to curl and look dramatic.
  • If it’s sausage, press it down slightly so it gets that golden crust.
  • When it’s done? Move it to a paper towel-lined plate and try not to snack on it. (I fail every time.)

Eggs, but make them fluffy

  • In a bowl, crack your eggs, add a pinch of salt and pepper, and whisk like you mean it. The more air you whisk in, the fluffier they get. We are not making sad flat eggs today.
  • In the same pan (yes, keep that flavor in there), melt a little butter over medium-low heat.

  • When they’re just barely set — still a little glossy — turn off the heat. They’ll keep cooking from the residual warmth. Soft eggs = elite breakfast energy.

Toast that bread like it deserves attention

  • Butter one side of each slice of bread.
  • Place them butter-side down in a clean skillet and toast until golden brown. Don’t rush this part. That crispy edge makes everything better.
  • Flip one slice over and add your cheese directly onto it so it starts melting slightly. That’s the move.

Stack it like a masterpiece

  • On top of the cheesy slice, layer:
  • Eggs
  • sausage
  • Any extras you’re feeling (avocado? tomato? a swipe of mayo?)
  • Top it with the second slice of toast.

  • If you want it extra melty and slightly pressed (like a breakfast panini moment), pop the whole sandwich back in the skillet for a minute per side.
