- 3 ripe bananas mashed
- ⅓ cup melted butter
- ¾ cup sugar
- 1 large egg beaten
- 1 tsp vanilla extract
- 1 tsp baking soda
- Pinch of salt
- 1 ½ cups all-purpose flour
- ½ cup Optional: chopped nuts or chocolate chips
Preheat your oven to 350°F (175°C) and grease the muffin tin or line with paper liners.
In a large bowl, mash the bananas with the melted butter.
Mix in sugar, egg, and vanilla until smooth.
Sprinkle baking soda and salt over the mixture, then gently stir in the flour. Don’t overmix!
Fold in nuts or chocolate chips if using.
Spoon batter into muffin cups, filling about 3/4 full.
